 Summer Fun

It’s the summer time. It’s the best time of year to hang out with family and friends, whether it’s a backyard barbecue, picnic, pool party or even just hanging out watching a movie (or two).

It’s also that time of year that I try to stay out of the kitchen as much as possible. I’ve been reading a Ninja Foodi Pressure Cooker review, and I am considering getting one so that I can spend less  time in the kitchen. It gets too hot in our kitchen during the summer (the AC does not get into the kitchen and there is no room for a fan).

When you get together with family and friends, especially if you are the host/hostess, it’s nice to have an ample supply of snacks, foods and beverages on hand to serve your guests. Even if you are simply hanging out, offering guests a tasty snack and ice cold beverage is a “must”.

I’ve been trying to plan a get together with a few friends. Sadly this time of year it’s hard to get everyone together because people have different vacation times or other plans. My plans for a big gathering didn’t pan out, but that is OK. We were still able to have ex-neighbors and current neighbors stop by just to hang out, chat and enjoy each other’s company.

Since this was an informal get together I figured some simple snacks would be sufficient, however I wanted to offer my guests something a little more than just the normal chips and dips they are accustomed to. I’ll admit that I don’t make dips from scratch. I usually buy pre-made ones. I assumed making a dip from scratch would be time consuming and cost more than a pre-made dip. I was very wrong about that. Dips are super easy to make. Most just need a few simple ingredients, many of which you might already have on hand.

The first thing I needed was to pick up some chips to share with my guests. Frito-Lay makes a lot of varieties that are favorites of ours, especially Doritos, TOSTITOS® SCOOPS!® Tortilla Chips and Lay’s® Classic potato chips. I picked up several bags so I could offer my guests a nice variety.

I even picked up some Pepsi. I had a few extra cans left over from Pepsi’s limited edition cans designed by HGTV’s Vern Yip. I shared them with my guests too. Even though I had plenty of other soda and cups, the cans are just too pretty to keep to ourselves.

Now that we had the chips we needed some great dips to go with them. One dip I made for my guests is Frito-Lay’s Black
Bean Corn Bites dip recipe. I’ve never had a dip like this before (made with beans and corn). I was excited to give it a try.

Ingredients:

Instructions:

  1. Combine all ingredients except for the chips and toss well in glass bowl.
  2. Let sit in the refrigerator for 30 minutes to 1 hour before spooning mixture into TOSTITOS® SCOOPS!® Tortilla Chips and place on serving dish and serve immediately.

I didn’t use avocado in the recipe when I prepared it. No one in my family really likes avocados and I asked my guests before hand and only one liked avocado. So that everyone could enjoy the recipe I omitted the avocado.

The recipe calls for you to fill the TOSTITOS® SCOOPS!® Tortilla Chips and serve them to guests that way. Before I had a chance to get a whole tray made up my guests were already using it as a regular dip and scooping the bean dip with the TOSTITOS® SCOOPS!® Tortilla Chips. So I put some aside in a bowl so that guests could scoop up as much as they wanted.

Bean and Corn Dip

Frito Bean Dip

I love this dip! I wouldn’t really call it a dip, per say. It’s like “stuffing” for the TOSTITOS® SCOOPS!® Tortilla Chips. It’s really hearty and filling. It’s a great change of pace from regular dips. It’s like a meal!

My husband was a bit “iffy” about the black beans but once he tasted it he was hooked. Even our friends asked for the recipe. I told them they could find it on the Frito-Lay website. 🙂

I wanted to create another dip for my guests, something they would never expect. I opted to make a Tzatziki dip. It’s made with cucumbers and Greek yogurt.

Tzatziki Ingredients

Tzatziki Dip

Ingredients:

  • 2 cups plain Greek yogurt
  • 1 large cucumber chopped up (approx. 1 cup)
  • 1/2 tablespoon of chopped garlic
  • 2 tablespoons of lemon juice
  • 2 tablespoons of finely chopped Dill
  • Black pepper (optional)
  • Salt (optional)

Directions:

  1. Combine all of the ingredients in a bowl and blend well. Add in salt and/or black pepper to taste.
  2. Chill before serving. Stir before serving to guests.

Chip in Dip

Classic Lays and Tzatziki Dip

This was so easy and oh-so-good. Plus my guests loved the break from the normal dips (canned/premade) that I usually serve.

This dip was perfect with Lay’s® Classic potato chips. We actually went through all the Lay’s® Classic potato chips and started to use some of the Sun Chips too.

We enjoyed each other’s company for the evening. The kids played and the men talked about the upcoming NFL pre-season. The ladies (myself included) chatted about things like what we had planned for the rest of the summer, what we’ve done so far and when we’re planning on going back to school shopping.

Who says you have to do something spectacular to have fun in the summer. Just hanging out with family and friends and enjoying each others company is just as fun.

  12. I love the Tostito chips and I like to make a layed dip using cream cheese, refried beans, salsa and shredded cheddar cheese. I layer in this order in a pyrex pie plate and right before serving I cook in the microwave until chedder cheese is melted. It’s a hit every time I make it.

    1 1/2 cups sour cream

It has 1 8 ounce package of cream cheese, 1 cup of sour cream, i envelope ranch dressing, 1 4 ounce can of water chestnuts, 1 10 ounce package frozen spinach. Mix the cream cheese, sour cream, and ranch dressing. Add the drained, chopped water chestnuts and thawed, spinach with the water squeezed out. Refrigerate at least two hours.

    Our favorite dip is a salsa dip. To make it you:

    blend 1 softened 8oz. package of cream cheese
    add 2 cups of shredded fiesta cheese and a medium size jar of your favorite salsa. Alternating the two as you blend.
    Chill and serve with your favorite chips.
    It’s always a big hit here.

  236. My favorite Frito lays product is Doritos and the dip I like to have for guests is a ranch or spinach dip.

  240. Fritos are my favorite but I don’t eat them often. My favorite dip is a homemade bean dip. Make refried beans (soak pintos/black beans overnight, cook in water with onions and spices all day until soft, drain, put back in the pot and still on the heat, mash them up and add in some olive oil and if needed some of the drained cooking water, salt, season to taste). Once the beans are done, toss in finely chopped cilantro and refrigerate for several hours. Add in 1 part sour cream to 3 parts refried beans, and five tablespoons of Frank’s red hot sauce per cup of sour cream. If you want to add texture, finely dice onions and peppers and toss those in too. To serve, you can top with some shredded cheese.

  245. We make the dip (8 oz cream cheese in bottom on 9′ square pan, pour can of hormel chili on top – top with shredded mexican cheese mix and zap for a few minutes) and then use the frito’s scoops – yummy

  248. I make a 7 layer dip with almost all parts coming from my garden and homemade…. we are big Scoops fans… they’re great tasting and it’s the best dipping chip by far…

  288. I like Lays Classic because they have the right amount of salt and grease-not correct according to the food police but I don’t care. I make a mean Artichoke Dip. Artichoke salad 12 0z drained and mashed, 1 8 oz bag mozzarella cheese, 1/4 tsp garlic powder, 1 cup Parmesan cheese, 1/2 cup mayonaise. Bake for 20 minutes in 350 degree oven.

    The recipe: 10 oz cooked frozen spinach (squeeze it very dry after cooking), 16 oz sour cream, 1 cup mayo, 1 package Knorr (r) vegetable recipe mix, and 8 oz. water chestnuts, chopped. Just smoosh (new recipe term!) everything together and chill it for at least 3 or 4 hours.
